Sausage Potato Salad Tomatoes Eggs

Sausages are not always the first things that come to mind when you think of a tasty salad. They can however, make a salad that is both different and delicious.

It is possible to use any kind of sausage in the salad, but it may be worth trying types that contain herbs or apples for an added twist.

Below you'll find instructions for making the basic sausage and potato salad and also some further variations you might like to try.

Sausage and Potato Salad

These are the ingredients you'll need for a sausage and potato salad to serve 2:
  • 4 sausages
  • 250g of small new potatoes, cooked and halved
  • 100g of cherry tomatoes, halved
  • A tablespoon of olive oil
  • 60g of mixed salad leaves
  • 2 spring onions, sliced

The Dressing for Your Sausage and Potato Salad

  • A teaspoon of clear honey
  • 1/2 a tablespoon of tomato puree
  • A splash of Tabasco sauce
  • A tablespoon of dry white wine vinegar
  • 1/2 a tablespoon of olive oil

Method

First take the sausages and cook under a medium grill for approximately 8 minutes. During this time occasionally turn the sausages, ensuring that they are brown all over. Once cooked, thinly slice the sausages and place on one side to cool down. Next take a non-stick frying pan and heat the oil. The potatoes should then be added and sautéd for approximately 7 minutes, or until they have turned a golden brown colour. Next add the spring onions, cherry tomatoes and sausages and sauté for approximately 4 minutes. Add the dressing ingredients, ensuring that they are well tossed, before removing from the heat. The salad leaves should them be placed in a large bowl, along with the potato mixture. Toss everything together and then serve.

Eggs and Mustard in a Sausage and Potato Salad

Eggs and mustard are also wonderful ingredients to go with a sausage and potato salad, making it even tastier.

Ingredients to serve 2:
  • 300g of salad potatoes scrubbed and halved
  • 5 sausages
  • 2 eggs
  • 4 spring onions, trimmed and chopped
  • 4 tablespoons of olive oil
  • 1/2 a tablespoon of wholegrain mustard
  • A tablespoon of white wine vinegar
  • A pinch of salt

First take a large pan of boiling water, that has been slightly salted and place the salad potatoes inside. These should be cooked for approximately 15 minutes, by which time they should be tender. Next take the sausages and cook under a grill for approximately 12 minutes, ensuring that they are cooked through. Take the eggs and place in a pan of cold water, before bringing the water to boil and cooking for approximately 7 minutes. Once cooked, remove the eggs from the boiling water and cool under a running tap. Once cooled, remove the shells from the eggs and chop. The potatoes need to be drained and left to cool for approximately 5 minutes. Add the sausages.

During this cooling time take the olive oil, vinegar, salt and mustard and whisk well. Once the potatoes have cooled a little pour the mixture over them ensuring that they are well coated. Next take the sausages and slice them before adding them to the potatoes, along with the chopped eggs and spring onions. Toss gently together and then serve.
