Sweet Chicken Salad

Chicken is a delicious and versatile ingredient for a salad and can be combined with numerous other ingredients to make a salad that is different every time.

Ingredients needed to make this sweet chicken salad are:

  • Chicken. The amount varies depending on personal choice but, to serve 2, 2 chicken breasts should be enough
  • 1/2 cup of pineapple chunks
  • 2 hard boiled eggs
  • 1/2 a cup of red peppers
  • Some grated cheese
  • A whole diced tomato
  • A cup of spinach leaves

First take the chicken and fry or bake until cooked. Next take the eggs and boil for approximately 11 minutes. During the time that the chicken is cooking and the eggs are boiling start to prepare the rest of the salad. First take a bowl and place the spinach inside, followed by the pepper, pineapple and tomatoes. Next take the boiled eggs and peel them. After slicing the eggs add them to the salad. Once the chicken is cooked it can then, after cutting or shredding, be added to the top of the salad along with the grated cheese. All that is left is to add the salad dressing and serve.

Honey and Grapes

Honey and grapes can also be used in a sweet chicken salad.

The ingredients needed to serve 2 are

  • 1/2 a cup of toasted pecans
  • 3/4 of a cup of mayonnaise
  • 1 1/2 cups of seedless grapes
  • 1 tablespoon of honey
  • 2 chicken breasts(sliced)
  • 1/2 a cup of green onions
  • 1/2 a cup of picante sauce
  • A pinch of salt
  • First take the mayonnaise, picante sauce and honey and combine in a bowl. Next add the rest of the ingredients, except the onions, and mix together. Next cover the bowl and place in a fridge. The onions should be sprinkled over the salad at the time of serving.

    Using Blueberries

    Blueberries are another great ingredient for a sweet chicken salad.

    To serve 2 the required ingredients are

    • 2 chicken breasts
    • 1 1/2 cups of blueberries
    • 2 tablespoons of olive oil
    • 1/2 a teaspoon of pepper
    • 2 sticks of celery(chopped)
    • 2 cups of mixed salad leaves
    • 1/2 a cup of shredded carrot
    • 3/4 of a cup of sweet onions(diced)
    • A clove of garlic(minced)
    • 3/4 of a cup of red pepper
    • A teaspoon of ginger
    • A pinch of salt
    • 1/4 of a cup of wine vinegar

    First mix the olive oil, salt, black pepper, garlic and wine vinegar together and place half of the mixture to one side. Next take the chicken and place on a shallow tray before covering it with the remaining mixture. Once this is done cover the chicken and place in the fridge for approximately 1 1/2 hours. By this time the meat should be well marinated. After this time remove the chicken from the fridge and dispose of the marinade. The chicken should then be grilled at a medium heat for approximately 8 minutes, or until cooked, on both sides. Cut the chicken into thin slices. Take the onions, carrot, pepper and celery and mix well as you add the dressing that you set aside earlier. It is important to ensure that the ingredients are well coated. Next place the lettuce leaves on a plate and add the chicken meat before covering with the celery mixture and adding the blueberries.
